Cozy Bowl of Minestrone

A hearty Italian minestrone soup filled with beans, pasta, tomatoes, and vibrant vegetables that brings warmth and nostalgia.

  • 1 can cannellini or kidney beans (rinsed and drained)
  • 1 cup small pasta (like ditalini or elbow)
  • 2 cups diced tomatoes (canned or fresh)
  • 1 zucchini, sliced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 68 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Fresh parsley, for garnish
  • Olive oil
  • Salt and pepper, to taste

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion, garlic, and celery; sauté for 5 minutes.
  2. Add the carrots and zucchini: Toss in the sliced carrots and zucchini, and sauté for another 5-7 minutes.
  3. Introduce the tomatoes: Add the diced tomatoes with salt and pepper. Stir and simmer for 3-4 minutes.
  4. Pour in the broth: Add vegetable broth to cover the veggies, increase heat and bring to a gentle boil.
  5. Incorporate the beans and pasta: Once boiling, add beans and pasta, stir, and cook for 10-15 minutes until pasta is al dente.
  6. Finish with greens and herbs: Stir in spinach, basil, and thyme 2 minutes before serving. Adjust seasoning.
  7. Serve and enjoy: Ladle into bowls, garnish with parsley and a drizzle of olive oil.

Notes

Serve with crusty bread or garlic toast for the perfect meal. Top with Parmesan cheese if desired.
