No Bake Chex Cookies

A simple and satisfying treat that combines Chex cereal, chocolate, and peanut butter, perfect for a quick snack.

  • 1 cup chocolate chips
  • 1 cup peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • Powdered sugar (for coating)

Instructions

  1. Prep your workspace by gathering all ingredients and lining a baking tray with parchment paper.
  2. Melt the chocolate and peanut butter in a saucepan over low heat until smooth.
  3. Add the honey and vanilla extract to the melted mixture, stirring well.
  4. Incorporate the Chex cereal into the chocolate-peanut butter mix, folding gently.
  5. Form cookie balls by scooping out about a tablespoon of the mixture and rolling them.
  6. Coat each ball in powdered sugar until well coated.
  7. Chill the cookie tray in the fridge for about 30 minutes to firm up the cookies.

Notes

Use almond butter or sunflower seed butter for a peanut-free option. If the mixture is sticky, wet your hands slightly before rolling.
