Unbelievable Blueberry French Toast Casserole

A warm, comforting French toast casserole bursting with juicy blueberries, perfect for brunch or special mornings.

  • 1 loaf of bread (preferably brioche or challah)
  • 1 cup fresh blueberries
  • 6 large eggs
  • 2 cups milk
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch of salt
  • Butter (for greasing the baking dish)

Instructions

  1. Prep the bread by cutting the loaf into 1-inch cubes.
  2. Mix the custard in a large mixing bowl with eggs, milk, sugar, vanilla extract, cinnamon, and salt.
  3. Layer half of the bread cubes in a greased baking dish, followed by half of the blueberries. Repeat the layers.
  4. Pour the custard mixture evenly over the layers.
  5. Cover the dish with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.
  6. Preheat your oven to 350°F (175°C).
  7. Bake for about 45-50 minutes, until golden brown and set.
  8. Let it rest for 10-15 minutes before serving.

Notes

For variations, consider adding chocolate chips, nuts, or different berries.
