Low Calorie Dragon Fruit Sorbet

A refreshingly simple and delicious low-calorie dessert made from vibrant dragon fruit, perfect for hot summer days.

  • 2 ripe dragon fruits, peeled and diced
  • 12 tablespoons honey or a sugar substitute (optional)
  • 1 tablespoon lime juice
  • 1 cup coconut water or water

Instructions

  1. Prepare the Dragon Fruit: Start by slicing your dragon fruits in half and scooping out the flesh. Use a sharp spoon to do this—it’s easier than it sounds! Chop the flesh into smaller chunks and toss them into a blender.
  2. Add Sweetness: Pour in 1-2 tablespoons of honey, depending on your sweetness preference. Taste as you go!
  3. Squeeze in Lime Juice: Add the tablespoon of lime juice to the blender to enhance the flavor.
  4. Blend It Up: Pour in that cup of coconut water (or water) and blend until smooth and creamy, scraping down the sides as needed.
  5. Freeze the Mixture: Pour the blended mixture into a shallow dish or ice cream maker. For a shallow dish, freeze for about 1-2 hours before stirring.
  6. Stir & Freeze Again: After an hour, stir with a fork to break up icy bits. Return it to the freezer, checking every 30 minutes until it’s the desired texture.
  7. Serve & Enjoy: Scoop sorbet into bowls and garnish with mint leaves or sliced fruits.

Notes

For a vegan option, use maple syrup or agave nectar. To enhance the flavor, consider adding pineapple, mango, avocado, or a dash of chili powder.
