  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Boil the Orzo: Start by bringing a medium pot of salted water to a boil. Once boiling, add the orzo. Cook according to the package instructions, usually about 8-10 minutes until al dente.
  2. Prep the Veggies: While the pasta is cooking, grab your knife and cutting board. Dice up your cherry tomatoes, cucumber, and red onion.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, and zest. Season it with a pinch of salt and pepper.
  4. Combine Ingredients: Once the orzo is cooked, drain it and rinse under cold water. In a large mixing bowl, combine the orzo, veggies, feta, and parsley. Drizzle the dressing over and toss gently.
  5. Chill and Serve: Let your salad chill in the fridge for about 30 minutes before serving.

Notes
