  • 1/4 teaspoon Turmeric (for color)
  • 1/2 teaspoon Lemon Extract

Instructions

  1. Prepare the Chia Pudding Mixture: In a medium-sized mixing bowl, combine the chia seeds and oat milk. Stir well to ensure no clumps form. Let it sit for about 10 minutes, then stir again.
  2. Add the Flavorings: Add the lemon zest, maple syrup, vanilla extract, and sea salt to the chia mixture. Stir well to combine all the flavors.
  3. Let the Chia Pudding Set: Cover the bowl and refrigerate for at least 1 hour or overnight.
  4. Make the Creamy Cashew Topping: Drain and rinse your soaked cashews. Blend with oat milk, maple syrup, lemon juice, turmeric, and lemon extract until super smooth.
  5. Taste and Adjust: Adjust sweetness and tartness to your taste with more maple syrup or lemon juice.
  6. Assemble Your Pudding: Layer the chia pudding at the bottom of bowls, topped with a generous dollop of creamy cashew topping.
