Lemon Blueberry Bread

A delightful blend of zesty lemon and sweet blueberries in a moist bread, perfect for any occasion.

  • Zest of 1 lemon
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup melted butter

Instructions

  1. Preheat the oven: First, preheat your oven to 350°F (175°C).
  2. Prep the pan: Grease a 9×5 inch loaf pan with butter or non-stick spray.
  3. Mix the dry ingredients: Whisk together the flour, baking powder, salt, and lemon zest in a mixing bowl.
  4. Cream butter and sugar: Beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  5. Add the eggs: Incorporate the eggs one at a time, mixing well after each.
  6. Incorporate the milk: Pour in the milk and mix until well combined.
  7. Combine wet and dry: Gradually add the dry mixture to the wet ingredients, folding gently.
  8. Fold in the blueberries: Gently fold in the blueberries being careful not to burst them.
  9. Pour batter into pan: Transfer the mixture to the prepared loaf pan and smooth the top.
  10. Bake: Bake in the oven for 50-60 minutes, or until a toothpick comes out clean.
  11. Cool it down: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
