Lasagna Soup

A cozy twist on a classic favorite, this Lasagna Soup brings all the flavors of traditional lasagna into a warm, comforting dish.

  • 1 lb Ground Beef
  • 8 oz Lasagna Noodles
  • 28 oz Canned Tomatoes (crushed or diced)
  • 15 oz Ricotta Cheese
  • 2 cups Shredded Mozzarella Cheese
  • 4 cups Beef or Vegetable Broth
  • 1 tbsp Olive Oil
  • 1 Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1/2 tsp Red Pepper Flakes
  • Salt and Pepper to taste
  • Parmesan Cheese (for serving)
  • Fresh Basil or Parsley (for garnish)

Instructions

  1. Brown the Ground Beef: In a large pot, heat olive oil over medium heat. Add the beef, breaking it up, and cook for 5-7 minutes until browned. Drain excess fat.
  2. Add Aromatics: Toss in chopped onions and minced garlic. Sauté for 3-4 minutes until the onions are translucent.
  3. Stir in the Tomatoes: Pour in canned tomatoes with their juices, and stir. Simmer for 5 minutes to meld flavors.
  4. Season the Soup: Add dried basil, oregano, and red pepper flakes. Season with salt and pepper.
  5. Add Broth and Noodles: Pour in 4 cups of broth and bring to a boil. Add lasagna noodles and cook for 10-12 minutes until al dente.
  6. Stir in the Ricotta: Remove from heat and add dollops of ricotta, gently stirring to create swirls.
  7. Cheese, Please!: Sprinkle shredded mozzarella on top, stirring or leaving it to melt. Optionally broil for a bubbly top.
  8. Serve: Ladle into bowls, garnish with fresh basil and Parmesan, and enjoy!

Notes

Feel free to substitute ingredients as desired. This soup is forgiving and adaptable!
