  • 16 oz Rotini Pasta
  • 1 pint Cherry Tomatoes (sliced)
  • 1 English Cucumber (chopped)
  • 1/2 Red Onion (thinly sliced)
  • 8 oz Fresh Mozzarella Balls
  • 4 oz Salami (sliced)
  • 3/4 cup Kalamata Olives (sliced)
  • 3/4 cup Pepperoncini
  • 1/2 cup Fresh Parsley (chopped)
  • 1/2 cup Fresh Basil (chopped)
  • Italian Salad Dressing

Instructions

  1. Cook the Rotini Pasta in salted boiling water according to package instructions, typically 8-10 minutes until al dente.
  2. Prepare the Vegetables by slicing cherry tomatoes, chopping cucumber, and thinly slicing red onion.
  3. Chop the Fresh Herbs by finely chopping parsley and basil.
  4. Slice the Salami and Olives into bite-sized pieces.
  5. Drain and Cool the Pasta by rinsing it under cold water.
  6. Combine Ingredients in a large bowl, mixing pasta, tomatoes, cucumber, onion, mozzarella, salami, olives, and pepperoncini.
  7. Dress the Salad with Italian dressing, starting with 1/2 cup and adjusting to taste.
  8. Mix in Fresh Herbs, gently folding them into the salad.
  9. Chill and Serve by refrigerating for at least 30 minutes before serving.
