Smooth Peach Butter

A delightful spread made from fresh peaches, perfect for toast, pancakes, and baking.

  • 4 lb peaches (peeled, pitted, and sliced into 1/2-inch wedges)
  • 2/3 cup granulated sugar
  • 1/3 cup water
  • 1 lemon (juiced and zested)
  • 1/2 teaspoon ground ginger
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the peaches: Peel, pit, and slice the peaches into thick wedges.
  2. Combine ingredients: In a large pot, mix sliced peaches, sugar, water, lemon zest and juice, ginger, and vanilla extract. Let it sit for 30 minutes.
  3. Simmer the mixture: Bring it to a gentle simmer over medium heat and cook for 30-45 minutes until peaches are soft.
  4. Blend it up: Let the mixture cool slightly, then puree until smooth.
  5. Thicken your butter: Return the mixture to the pot and simmer on low heat for 30-60 minutes to thicken.
  6. Check for doneness: Ensure the butter holds its shape and is at your desired consistency.
  7. Cool and store: Let it cool before transferring to jars for storage.
