Red Hamburger Relish

A delightful sweet and tangy relish that elevates burgers, sandwiches, and more.

Ingredients

  • 2 cups chopped cucumbers (unpeeled)
  • 2 cups chopped sweet red, yellow, orange, or green pepper
  • 2 cups chopped zucchini
  • 1 cup chopped onion
  • 1/4 cup pickling salt
  • 4 cups chopped seeded peeled tomatoes
  • 3 cups white vinegar
  • 1 tablespoon mustard seeds
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon ground cloves
  • 2 cups granulated sugar

Instructions

  1. Prep the vegetables: Wash and chop cucumbers, peppers, zucchini, and onion.
  2. Soak them in a large bowl with pickling salt and cold water for about 2 hours.
  3. Rinse the vegetable mixture under cold water and drain thoroughly.
  4. Prepare the tomatoes by chopping and peeling them as required.
  5. Simmer together the drained vegetables, chopped tomatoes, vinegar, mustard seeds, turmeric, cinnamon, allspice, ground cloves, and sugar in a large pot.
  6. Cook for about 30-40 minutes until thickened, stirring occasionally.
  7. Sterilize jars by washing them in hot soapy water and placing them in a preheated oven.
  8. Fill the jars with thickened relish, leaving about half an inch of headspace.
  9. Seal the jars tightly with sterilized lids.
  10. Process (optional) jars in a boiling water bath for 15 minutes to preserve.
  11. Cool completely on a wire rack or kitchen towel before storing.

Notes

This relish can last up to a year if stored properly. You can also mix it into other dishes like potato salads or tacos.
