Maple Dijon Chicken Salad

A flavorful and refreshing chicken salad with a tangy Maple Dijon dressing, featuring crisp lettuce and sweet apples.

  • 2 Chicken breasts
  • 4 cups Lettuce (romaine, butter, or mixed greens)
  • 2 Apples (Honeycrisp, Fuji, or Granny Smith)
  • 1/4 cup Maple syrup
  • 2 tablespoons Dijon mustard
  • 1/4 cup Olive oil
  • 1 tablespoon Lemon juice
  • Salt and pepper to taste
  • Optional: toasted nuts (pecans or walnuts), feta cheese

Instructions

  1. Prep your chicken: Season the chicken breast with salt, pepper, and garlic powder. Grill, bake, or poach until no longer pink, about 6–9 minutes per side. Let rest before slicing.
  2. Combine the salad base: Tear or chop the lettuce into bite-sized pieces in a large bowl.
  3. Slice the apples thinly and toss with lemon juice to prevent browning.
  4. Make the dressing: Whisk together maple syrup, Dijon mustard, and olive oil in a small bowl. Adjust flavors as desired.
  5. Combine the salad: Add the sliced chicken, apples, and dressing to the greens and toss gently.
  6. Serve the salad: Plate beautifully and add toasted nuts or feta on top if desired.

Notes

Consider using smoked chicken or rotisserie chicken for convenience. Store leftovers separately to prevent wilting.
