Apple Crisp Cheesecake

A fusion of creamy cheesecake and warm apple crisp, perfect for gatherings or treating yourself.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 4 cups apples, peeled and sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/4 cup cold butter, cubed

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Press this mixture into the bottom of a 9-inch springform pan.
  3. Beat the softened cream cheese in another bowl until smooth. Gradually add 1 cup of sugar, mixing until fully incorporated.
  4. Add the eggs one at a time, then the vanilla extract. Make sure everything is well combined.
  5. Fold in the sliced apples and lemon juice.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake in the preheated oven for 60 minutes, until the center is slightly jiggly.
  8. While it bakes, mix the sliced apples, brown sugar, and cinnamon in a separate bowl.
  9. In another bowl, combine rolled oats, flour, and cold butter until crumbly.
  10. After baking, layer the apple mixture and the oat crumble on top of the cheesecake.
  11. Return the cheesecake to the oven for another 30 minutes.
  12. Cool in the oven with the door ajar for an hour, then refrigerate for at least 4 hours or overnight.
  13. Serve slices garnished with whipped cream or vanilla ice cream.

Notes

You can customize with nuts or different fruits for variation.
