Sweet and Savory Honey Peach Chicken

  • 2 tbsp unsalted butter
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • ¾ cup peach preserves
  • ⅓ cup chicken broth
  • 1 ½ tbsp honey
  • 2 tsp Dijon mustard
  • 1 tsp dried thyme
  • 2 peaches, sliced into ½-inch wedges
  • ¼ tsp red pepper flakes
  • 1 tsp soy sauce
  • ¼ cup fresh basil leaves, julienned

Instructions

  1. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken, seasoning with salt and pepper. Cook for 5-7 minutes until browned.
  2. Add butter, shallot, and garlic. Cook for an additional 2-3 minutes until shallots soften and garlic is fragrant.
  3. Create the glaze: Add peach preserves, chicken broth, honey, Dijon mustard, thyme, red pepper flakes, and soy sauce. Stir and bring to a gentle simmer.
  4. Simmer away: Add sliced peaches and let simmer on low for 10-15 minutes, stirring occasionally.
  5. Finish and serve: Turn off heat and stir in fresh basil before serving.

Notes

For a twist, try adding jalapeños for spice or swapping peach preserves for barbecue sauce.
