Honey Garlic Chicken and Sweet Potatoes

A quick and delicious dinner featuring marinated chicken breasts paired with roasted sweet potatoes and green beans in a honey garlic sauce.

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, whisk together the honey, soy sauce, minced garlic, paprika, thyme, and a pinch of salt and pepper. Place the chicken breasts in a resealable plastic bag or a large bowl, and pour the marinade on top. Seal or cover, and let it marinate in the fridge for at least 30 minutes.
  2. Preheat the Oven: Preheat your oven to 400°F (200°C).
  3. Prepare the Vegetables: Peel and cube your sweet potatoes. Toss them in a bowl with olive oil, salt, pepper, and a sprinkle of paprika. Lay them out on a baking sheet. Trim your green beans and place them on another tray. Drizzle with olive oil, salt, and pepper as well.
  4. Roast the Vegetables: Slide the trays into the oven: sweet potatoes on the top rack and green beans on the bottom. Roast for about 25-30 minutes.
  5. Cook the Chicken: Heat a large skillet over medium-high heat. Remove the chicken from the marinade and add to the skillet, cooking for around 5-7 minutes on each side until golden brown.
  6. Glaze the Chicken: Pour the reserved marinade over the chicken in the skillet. Let it simmer for a few minutes until the sauce thickens slightly and the chicken is cooked through.
  7. Plate it Up: Serve the glazed chicken alongside sweet potatoes and green beans, drizzling extra sauce over the top.

Notes

For a lovely presentation, garnish with fresh parsley or a sprinkle of sesame seeds.
