Honey BBQ Chicken and Rice

A cozy and comforting one-pan meal featuring succulent chicken thighs and fluffy rice, all beautifully infused with honey and barbecue flavors.

  • 1.5 lbs Chicken Thighs
  • 2 tbsp Olive Oil
  • 1.5 cups Long-Grain White Rice
  • 3 cups Chicken Broth or Water
  • 1 cup Barbecue Sauce
  • 0.5 cup Honey
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Brown the chicken thighs, seasoning both sides with salt and pepper, for about 5-7 minutes on each side.
  3. Add the chopped onion and sauté for 2-3 minutes until translucent, then add the garlic and cook until fragrant.
  4. Incorporate the rice, stirring to mix with the onions and garlic for about 1 minute.
  5. Add in the chicken broth and stir to combine.
  6. Mix the BBQ sauce and honey in a small bowl, then pour over the rice and place the chicken on top.
  7. Simmer for 25-30 minutes on low heat, covered, until the rice is cooked.
  8. Check for doneness; the chicken should reach an internal temperature of 165°F.
  9. Serve up the dish, garnishing with parsley if desired.

Notes

You can substitute chicken thighs with chicken breasts for a lighter option, or use tofu/tempeh for a vegetarian version.
