Healthy Grilled Vegetable Kebabs

A flavorful and colorful recipe for grilled vegetable kebabs that brightens up your summer meals.

Ingredients

  • 1 zucchini, sliced
  • 1 bell pepper (any color), cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 1 cup mushrooms, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Prep the vegetables by washing and cutting them as described.
  2. Chop the onion into large chunks.
  3. Halve the mushrooms.
  4. Mix the marinade with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  5. Toss the veggies in the marinade and let sit for 15 minutes.
  6. Prepare the skewers, soaking wooden ones if needed.
  7. Skewer the vegetables alternating for color.
  8. Preheat the grill to medium-high.
  9. Grill the kebabs for about 10-12 minutes, turning regularly.
  10. Check for doneness and serve.

Notes
