A vibrant medley of textures and flavors, this Harvest Cobb Salad combines seasonal ingredients for a delightful autumn feast.

  • 1 pound Chicken (grilled or roasted), cubed
  • 45 strips Bacon, cooked and crispy
  • 3 Eggs, hard-boiled and chopped
  • 2 crisp Apples, chopped (Granny Smith or Honeycrisp)
  • ½ cup Blue Cheese, crumbled
  • 4 cups Mixed greens (arugula, spinach, or spring mix)
  • ½ cup Walnuts or pecans, chopped
  • Your favorite Vinaigrette (balsamic recommended)

Instructions

  1. Cook the chicken by seasoning with salt, pepper, and olive oil. Grill or roast at 375°F for 25-30 minutes. Let it rest and cube.
  2. Prepare the bacon by cooking in a skillet over medium heat for 8-10 minutes until crispy.
  3. Hard-Boil the eggs by placing in cold water, bringing to a boil, and boiling for 9-12 minutes. Plunge into ice water.
  4. Chop the apples into bite-sized pieces, keeping the skin on.
  5. Mix the greens in a large bowl.
  6. Assemble the salad by layering chicken, bacon, eggs, apples, blue cheese, and nuts over the greens.
  7. Dress the salad with vinaigrette just before serving.
  8. Final taste test for seasoning and adjust if necessary.
