Spooky Halloween Salad

A vibrant Halloween salad featuring mozzarella ‘eyeballs’ and fresh seasonal ingredients that will impress your guests.

Ingredients

  • 8 oz mozzarella balls (about 16 balls)
  • 6 oz mixed salad greens
  • 1 pint sweet cherry tomatoes
  • 3 tbsp fresh basil, thinly sliced
  • 3 tbsp olive oil
  • 2 tbsp balsamic glaze
  • Flaky sea salt
  • Freshly cracked black pepper
  • 1/2 lemon (optional)

Instructions

  1. Prepare your ingredients: Wash all your greens and cherry tomatoes. Spin the greens in a salad dryer or pat them dry with a clean kitchen towel.
  2. Bowl up the greens: Place the mixed salad greens in a large serving bowl.
  3. Add the cherry tomatoes: Cut your cherry tomatoes in half and scatter them across the greens.
  4. Introduce the mozzarella eyes: Carefully place the mozzarella balls on top.
  5. Freshen it up with basil: Scatter the thinly sliced basil over the top.
  6. A drizzle of goodness: Drizzle olive oil and balsamic glaze over the salad.
  7. Season it right: Sprinkle flaky sea salt and freshly cracked black pepper on top.
  8. A zesty squeeze: If using lemon, squeeze a bit over the salad.
  9. Toss and serve: Lightly toss the salad with your hands or salad tongs.

Notes

You can prep most ingredients ahead of time but toss with dressing just before serving to keep everything fresh.
