Halloween Jack-O’-Lantern Peppers

Delightfully spooky stuffed peppers that combine the festive spirit of Halloween with healthy eating, making them a fun family project.

  • 4 orange bell peppers
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep the peppers by slicing the tops off and scooping out the insides, carving jack-o-lantern faces.
  3. Mix the filling in a large bowl with the cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, and salt and pepper.
  4. Stuff each carved pepper with the flavorful filling.
  5. Place the filled peppers upright in a baking dish, adding a splash of water to the bottom.
  6. Bake covered with foil for 30-35 minutes.
  7. Optional: Remove the foil and sprinkle cheese on top for the last 10 minutes of baking.
  8. Serve the peppers once cooled slightly.

Notes

Feel free to modify the filling based on your preferences. You can prepare the peppers ahead of time and store the filling separately in the fridge.
