Grilled Cheese Burrito

A delicious fusion of grilled cheese and burrito, combining gooey cheese, seasoned beans, and your choice of fun fillings wrapped in a warm tortilla.

Ingredients

  • Large Flour Tortillas (2-3)
  • Cheddar Cheese (1 cup, shredded)
  • Monterey Jack Cheese (1 cup, shredded)
  • Refried Beans (1 cup)
  • Salsa (½ cup)
  • Butter (2 tablespoons)
  • Seasoning (optional: garlic powder, cumin, or chili powder)
  • Any additional fillings (avocado, jalapeños, cooked chicken, etc., to taste)

Instructions

  1. Start by shredding your cheeses if they’re not already prepped. Use a box grater for a quick task, and remember: cheese that you shred yourself melts better! Prepare your tortillas by warming them slightly in the microwave (10-15 seconds) to make them easier to handle.
  2. Lay your warm tortilla on a clean surface. Spoon a hefty tablespoon of refried beans in the center, spreading it gently. Then layer on the shredded cheeses, followed by your salsa (or any other fillings!) to make it spectacular. Remember, don’t overfill!
  3. Start rolling the burrito from one end to the other, tucking in the sides as you go to create a nice seal. Once rolled, set it aside while you repeat with any remaining tortillas and fillings.
  4. Heat a skillet over medium heat and melt the butter. Once it’s sizzling, carefully place your burritos seam-side down in the hot pan. Grill for about 2-3 minutes on each side until beautifully browned.
  5. Once perfectly grilled, take your burritos out and place them on a cutting board. Slice them diagonally for that classic presentation, revealing all that cheesy deliciousness inside.
