Grilled Barbecue Tofu Veggie Skewers

Delicious grilled skewers featuring marinated tofu and colorful vegetables, perfect for summer barbecues.

  • 1 block firm tofu, cubed
  • 1 bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 1/4 cup barbecue sauce
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Prep the Tofu: Start by pressing your firm tofu. Wrap it in a clean kitchen towel or paper towels and place a heavy object on top to remove excess moisture for at least 20–30 minutes.
  2. Cut the Veggies: Chop your bell pepper, zucchini, and onion into bite-sized chunks. Halve the cherry tomatoes.
  3. Marinate the Tofu: Cut the tofu into cubes and toss with barbecue sauce and seasoning. Marinate for at least 15 minutes.
  4. Assemble the Skewers: Thread the tofu and veggies onto the skewers, alternating ingredients.
  5. Preheat the Grill: Preheat your grill to medium-high heat and oil the grates.
  6. Grill the Skewers: Cook the skewers for about 10–15 minutes, brushing with remaining barbecue sauce.
  7. Check for Doneness: Ensure everything is beautifully charred and tender.
  8. Serve and Enjoy!: Cool slightly before serving with garnishes.

Notes

These skewers can be made ahead of time; marinate the tofu the night before for extra flavor.
