French Onion Chicken Orzo Casserole

A comforting casserole inspired by French onion soup, featuring layers of caramelized onions, shredded chicken, and gooey cheese atop orzo pasta.

  • 1 tablespoon olive oil
  • 2 large yellow onions (thinly sliced)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 garlic cloves (minced)
  • 1 1/2 cups orzo pasta
  • 2 cups cooked shredded chicken
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/2 teaspoon Worcestershire sauce or balsamic glaze

Instructions

  1. Caramelize the onions: In a large skillet over medium heat, melt the butter and olive oil together. Add the sliced onions, sprinkle with sugar and salt, and cook for 20-25 minutes until golden brown.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Combine the shredded chicken, thyme, black pepper, and cooked orzo into the onions.
  4. Pour in the chicken broth and heavy cream, stirring continuously.
  5. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  6. Transfer the mixture to the casserole dish, spreading it evenly. Top with mozzarella and Parmesan cheese.
  7. Bake for 30-35 minutes, or until bubbly and golden brown on top.
  8. Let it sit for 5-10 minutes before serving.

Notes

Serve hot, garnished with fresh thyme or parsley. Pairs well with salad and crusty bread.
