Classic French Crêpes

Thin, delicate pancakes that can be filled with sweet or savory ingredients, perfect for any meal.

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 1 tablespoon sugar (optional)
  • Pinch of salt

Instructions

  1. Mix the all-purpose flour, eggs, and a pinch of salt in a large mixing bowl. Gradually pour in the milk and melted butter while whisking continuously until smooth.
  2. Heat a non-stick skillet over medium heat, adding a dab of butter or oil to coat the surface.
  3. Pour about 1/4 cup of the batter into the center of the skillet, swirling the pan to spread it thinly.
  4. Cook for 1-2 minutes until edges lift slightly and the surface sets, then flip and cook for an additional 30 seconds to 1 minute.
  5. Layer the cooked crêpes on a plate, keeping them warm in a low oven as you repeat the process.
