  • 1 fennel bulb, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil

Instructions

  1. Prep Your Ingredients: Wash and chop your zucchini, onion, garlic, and fennel.
  2. Sauté the Aromatics: In a large pot, heat olive oil. Add onion and fennel and sauté for 5-7 minutes.
  3. Add the Garlic: Stir in minced garlic and cook for about a minute.
  4. Throw in the Zucchini: Incorporate diced zucchini and cook for another 3-4 minutes.
  5. Pour in the Broth: Add vegetable broth and bring to a gentle boil. Simmer uncovered for 15-20 minutes.
  6. Blend It Up: Use an immersion blender or stand blender to blend the soup to your desired consistency.
  7. Season to Taste: Return the soup to the pot and season with salt and pepper.
