Autumn Grain Bowl

A vibrant and nutritious grain bowl featuring nutty farro, roasted squash, and fresh kale, perfect for embracing the flavors of fall.

Ingredients

  • 1 cup farro
  • 2 cups water (or vegetable broth)
  • 2 cups roasted squash (butternut or acorn)
  • 2 cups kale
  • 1/2 cup dried cranberries
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Optional toppings: feta cheese, pumpkin seeds, fresh herbs (parsley or thyme)

Instructions

  1. Cook the farro by boiling 2 cups of water with a pinch of salt, adding 1 cup of farro, and simmering for 20-30 minutes until tender.
  2. Roast the squash by preheating the oven to 400°F (200°C), cubing the squash, tossing it with olive oil, salt, and pepper, and roasting for 25-30 minutes.
  3. Prepare the kale by washing, tearing it into pieces, massaging with olive oil, and a pinch of salt for 1-2 minutes.
  4. Assemble the bowl starting with farro, then layering with kale, roasted squash, and cranberries.
  5. Top with optional feta cheese or pumpkin seeds and serve immediately or refrigerate for meal prep.
