Harvest Chicken Salad

A flavorful medley of crisp apples, tender chicken, crunchy pecans, and earthy greens, all tossed in a tangy vinaigrette, perfect for fall.

  • 4 cups mixed greens (arugula, spinach, baby kale)
  • 1 to 1.5 cups sliced apples (Honeycrisp or Granny Smith)
  • 1 cup toasted pecans
  • 1/2 cup dried cranberries
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the chicken: Season it and grill or pan-sear until cooked through. Let it rest and slice.
  2. Prepare the vinaigrette: Whisk together olive oil, vinegar, honey, Dijon mustard, and seasoning.
  3. Toast the pecans: In a skillet over medium heat, toast pecans until fragrant.
  4. Prep the salad greens: Toss mixed greens in a large bowl.
  5. Add the goodies: Toss in apples, pecans, and cranberries.
  6. Combine and serve: Mix in the chicken and drizzle vinaigrette over the salad, tossing lightly.
  7. Taste test: Adjust seasoning if necessary.
