Cranberry Walnut Bread

This delightful Cranberry Walnut Bread is a perfect balance of sweet and tangy with a moist, tender loaf that combines earthy walnuts and vibrant cranberries.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon orange zest
  • 1 cup fresh or dried cranberries
  • 1 cup chopped walnuts

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C).
  2. Prepare the pans: Grease a loaf pan lightly with butter or non-stick spray.
  3. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  4. Combine wet ingredients: In another bowl, beat the eggs and then add the milk, melted butter, and orange zest.
  5. Mix it up: Pour the wet ingredients into the dry mixture and gently fold until just combined, then fold in your cranberries and walnuts.
  6. Pour into the pan: Transfer the batter into the prepared loaf pan and smooth the top.
  7. Bake: Pop that pan into your preheated oven and bake for about 60–70 minutes until a toothpick comes out clean.
  8. Cool down: Once it’s done, let your bread cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

For a vegan version, substitute eggs with flax eggs and milk with almond milk or oat milk.
