Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and chopped apples
  • 1 teaspoon cinnamon
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven: Set your oven to 325°F (160°C).
  2. Make the graham cracker crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand. Press firmly into the bottom of a 9×13-inch baking pan lined with parchment paper.
  3. Bake the crust: Place the crust in the oven and bake for about 10 minutes until set and lightly golden. Let it cool.
  4. Prepare the filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
  5. Add the eggs: One at a time, beat in the eggs until just combined.
  6. Incorporate the vanilla: Stir in the vanilla extract.
  7. Toss in the apples and cinnamon: Fold in chopped apples and cinnamon.
  8. Pour the filling: Carefully pour the cheesecake filling over the cooled crust.
  9. Bake again: Bake for about 40-45 minutes until the center is set but still has a slight jiggle.
  10. Cool down: Let the bars cool at room temperature for an hour, then refrigerate for at least 4 hours.
  11. Drizzle that caramel: Once chilled, drizzle caramel sauce over the top.
  12. Slice and serve: Cut into squares and serve with extra caramel drizzles or whipped cream.
