Pumpkin Maple Bread

  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with oil or butter.
  3. Mix the wet ingredients in a large bowl: pumpkin puree, maple syrup, eggs, and vegetable oil until smooth.
  4. Combine the dry ingredients in another bowl: flour, baking soda, salt, cinnamon, and nutmeg.
  5. Blend the dry mixture into the wet ingredients until just combined.
  6. Fold in the pecans until evenly distributed.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 55-65 minutes, or until a toothpick comes out clean.
  9. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Serve and enjoy warm, with extra maple syrup or butter if desired.

Notes

You can customize this recipe by adding chocolate chips, omitting nuts, or using gluten-free flour.
