Easy Egg Bites

Delicious and customizable egg bites that are perfect for breakfast or meal prep.

Ingredients

  • 8 large eggs
  • 1/2 cup half-and-half or milk
  • 1/4 cup diced green pepper
  • 1/4 cup green onions
  • 1/4 cup chopped spinach
  • 3/4 cup diced ham or cooked bacon, divided
  • 3/4 cup shredded cheddar cheese, divided
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. Crack the eggs into a large bowl and whisk until combined and frothy.
  3. Add the half-and-half (or milk) to the beaten eggs and whisk together.
  4. Toss in the diced green pepper, green onions, chopped spinach, and half of the diced ham.
  5. Fold in half of the shredded cheddar cheese gently.
  6. Season the mixture with salt and pepper, adjusting to taste.
  7. Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
  8. Sprinkle the remaining diced ham and shredded cheddar cheese on top of each cup.
  9. Pop the muffin tin into the oven and bake for 20-25 minutes until puffed and set.
  10. Let cool briefly before using a spatula to remove the egg bites from the tin.

Notes

These egg bites can be stored in the fridge for about a week and are great for meal prep. They can be frozen, just make sure to cool completely before storing.
