French Mustard Chicken

  • 4 chicken thighs, skin-on
  • 2 tablespoons Dijon mustard
  • 2 tablespoons whole grain mustard
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Prep the chicken: Rinse and pat dry the chicken thighs. Season both sides with salt and pepper.
  2. Brown the chicken: In a large skillet, heat olive oil over medium-high heat. Add the thighs, skin-side down, and cook until golden brown—about 5-7 minutes. Flip and brown the other side for another 5 minutes. Remove and set aside.
  3. Sauté the aromatics: In the same skillet, add chopped onion and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for another minute.
  4. Create the sauce: Stir in Dijon and whole grain mustard, cooking for about 2 minutes.
  5. Pour in the broth: Gradually whisk in chicken broth, scraping up bits from the pan. Bring to a gentle simmer.
  6. Incorporate creaminess: Add heavy cream, stirring to combine. Taste and adjust salt and pepper.
  7. Return chicken to the pan: Nestle the browned chicken back into the sauce and simmer gently for about 15-20 minutes, until cooked through.
  8. Garnish and serve: Sprinkle with fresh parsley and serve hot.

Notes

Serve with mashed potatoes or a fresh salad. A crusty baguette is perfect for soaking up the sauce.
