Death-by-Chocolate No-Bake Cheesecake Bars

  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 8 oz chocolate (dark or semi-sweet), melted
  • Chocolate shavings or chips for garnish

Instructions

  1. Prepare your baking dish: Start by greasing a 9×9-inch baking dish or lining it with parchment paper.
  2. Make the crust: Place the Oreo cookies in a food processor and pulse until finely crushed. Add melted butter and pulse until it resembles wet sand. Press the mixture firmly into the bottom of your dish.
  3. Prepare the filling: In a mixing bowl, add softened cream cheese and powdered sugar. Beat until smooth and creamy.
  4. Incorporate the chocolate: Allow melted chocolate to cool slightly, then add it to the cream cheese mixture along with vanilla extract. Beat until combined.
  5. Whip the cream: In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the chocolate mixture.
  6. Combine and set: Pour the filling over the crust, spreading it evenly. Tap the dish to help settle the mixture and refrigerate for at least 4 hours.
  7. Serve up some happiness: Once set, run a knife around the edges and lift the bars out. Slice and top with chocolate shavings or chips.

Notes

For extra flavor, consider adding nuts to the crust or a layer of fresh berries. Serve with whipped cream or vanilla ice cream.
