Crockpot Teriyaki Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup teriyaki sauce
  • 1 cup mixed vegetables (broccoli, bell peppers, carrots)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving
  • Sesame seeds for garnish

Instructions

  1. Prep the chicken. Start by giving your chicken breasts a good rinse under cold water, then pat them dry with a paper towel. If they are particularly thick, you might want to slice them in half to ensure even cooking.
  2. Mix the sauce. In a bowl, combine the teriyaki sauce, minced garlic, and ginger. Taste the sauce and adjust as needed.
  3. Layer the ingredients. Place the chicken in your crockpot and pour the teriyaki mixture over it. Arrange the mixed vegetables around and on top.
  4. Set it and forget it! Cover your crockpot and set it to low for 4-6 hours or high for 3-4 hours.
  5. Taste and adjust. After the cooking time, taste the sauce and adjust seasoning if necessary.
  6. Shred the chicken. Carefully remove the chicken from the crockpot and shred it with two forks, mixing it with the vegetables and sauce.
  7. Serve it up! Prepare your rice, plate it, and top with the chicken and vegetable mix. Garnish with sesame seeds.

Notes

For a richer flavor, substitute chicken breasts with thighs. You can also add pineapple or mango for a fruity twist.
