Crispy Zucchini-Feta Balls

Delicious, golden, and crispy bites of zucchini and feta, perfect for appetizers or as a side dish.

Ingredients

  • 2 medium zucchinis (about 400 g)
  • 150 g feta cheese (crumbled)
  • 1 egg
  • 50 g breadcrumbs
  • 2 tbsp oats (optional)
  • 2 tbsp freshly chopped parsley
  • 1 clove garlic (finely chopped)
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Prepare the zucchini by grating it and squeezing out moisture.
  2. Combine all ingredients in a large mixing bowl.
  3. Mix everything until evenly combined.
  4. Shape the mixture into small balls and place them on a parchment-lined baking sheet.
  5. Preheat olive oil in a non-stick skillet over medium heat.
  6. Fry the balls in batches until golden brown, about 4-5 minutes per side.
  7. Drain on a paper towel-lined plate.
  8. Serve hot with your favorite dipping sauce.

Notes

These can be made ahead of time and stored in the fridge or frozen for future use!
