Vegan Apple Cider Donut Holes

Delightful vegan donut holes infused with apple cider and coated in cinnamon sugar, perfect for fall gatherings.

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon sea salt
  • 1/3 cup melted vegan butter
  • 1/4 cup unsweetened almond milk
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • 1/4 cup melted vegan butter (for coating)

Instructions

  1. Prepare the apple cider by pouring it into a small saucepan and boiling until reduced by half, about 10-15 minutes.
  2. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Combine the wet ingredients in another bowl: melted vegan butter, almond milk, applesauce, and vanilla extract. Add cooled apple cider and stir until combined.
  4. Bring the wet and dry ingredients together, mix gently until just combined.
  5. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  6. Fill each muffin cup about 3/4 full with the batter.
  7. Bake for about 12-15 minutes, or until a toothpick inserted comes out clean.
  8. Coat warm donut holes in melted vegan butter followed by a mix of sugar and cinnamon.
  9. Serve immediately and enjoy warm.

Notes

Best enjoyed fresh; can be stored in an airtight container for up to 2-3 days.
