Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then chop them into 1-inch cubes.
  3. Mince the garlic finely.
  4. Combine the cubed sweet potatoes with olive oil, minced garlic, salt, and pepper in a large mixing bowl.
  5. Add the grated Parmesan over the sweet potatoes and toss gently.
