Grilled Zucchini With Goat Cheese, Basil & Honey

A delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fresh basil, and a sweet drizzle of honey.

  • 5 medium zucchinis, sliced into ½-inch thick slices
  • Salt, to taste
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup goat cheese, crumbled
  • 2 Tbsp fresh basil, chopped
  • 1.5 Tbsp honey
  • Pepper, to taste

Instructions

  1. Prep the zucchini by washing and slicing them into ½-inch thick slices.
  2. Salt the zucchini slices and let them rest in a colander for about 15-20 minutes.
  3. Pat the zucchini dry with paper towels after rinsing off the excess salt.
  4. Oil the zucchini slices in a bowl with olive or avocado oil.
  5. Heat the grill to medium-high heat and prepare the grill grates.
  6. Grill the zucchini slices for about 3-4 minutes on each side until tender.
  7. Add the crumbled goat cheese over the grilled zucchini while still warm.
  8. Drizzle honey generously over the zucchini and cheese.
  9. Finish with chopped basil and a sprinkle of cracked black pepper.

Notes

Best served fresh, but can be made a few hours in advance and reheated.
