Tomato Basil Soup

A creamy and luscious tomato basil soup that warms the heart and reminds you of cozy gatherings.

Ingredients

  • Fresh Tomatoes: Approximately 2 pounds, chopped (or two 14-ounce cans of canned whole tomatoes)
  • Fresh Basil: About 1 cup, torn
  • Garlic: 4-5 cloves, minced
  • Heavy Cream: 1 cup
  • Olive Oil: 2 tablespoons
  • Salt: To taste
  • Pepper: To taste

Instructions

  1. Prep the Ingredients: Wash the tomatoes thoroughly and chop them into quarters.
  2. Sauté the Garlic: Heat the olive oil in a large pot over medium heat, then add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the Tomatoes: Toss in the chopped fresh tomatoes (or canned tomatoes) and cook for about 10 minutes, stirring occasionally.
  4. Incorporate the Basil: Add the torn basil leaves and let simmer for another 5-7 minutes.
  5. Blend It Up: Use an immersion blender to blend the soup until smooth, or transfer batches to a regular blender, being cautious.
  6. Add Cream: Stir in the heavy cream, adjust seasoning with salt and pepper, and add a splash of lemon juice if desired.
  7. Simmer and Serve: Let simmer for another 5 minutes, then ladle into bowls and garnish with cream and fresh basil.

Notes

Serve with crusty bread or grilled cheese for an authentic pairing. This soup can be made ahead of time and stored in the refrigerator for up to three days.
