Creamy Spinach Chicken Soup

A comforting bowl of creamy spinach chicken soup that combines the richness of cream with fresh spinach and tender chicken for a heartwarming meal.

  • 1 pound boneless, skinless chicken breast or thighs
  • 4 cups fresh spinach, washed and chopped
  • 1 cup heavy cream
  • ¼ cup freshly grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 34 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Season the chicken with salt and pepper. Cook for 7-8 minutes on each side until browned and cooked through. Remove and shred.
  2. Add the remaining tablespoon of olive oil, then toss in the chopped onion and minced garlic. Sauté for 3-5 minutes until translucent.
  3. Pour in the chicken broth and bring to a gentle simmer. Add the shredded chicken back into the pot and simmer for about 10 minutes.
  4. Add the chopped spinach and stir until it wilts down (about 2-3 minutes).
  5. Stir in the heavy cream and grated Parmesan, cooking until the soup is heated through.
  6. Taste and adjust seasoning with more salt and pepper as necessary. Serve and enjoy!

Notes

For a lighter option, substitute heavy cream with half-and-half or coconut cream. This soup can also be frozen and reheated later.
