Creamy Pumpkin Pudding

Instructions

  1. Prepare the Hot Water Bath: Preheat your oven to 350°F (175°C) and fill a large roasting pan halfway with hot water.
  2. Combine Ingredients: In a medium mixing bowl, whisk together pumpkin puree, heavy cream, sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt.
  3. Thicken It Up: Whisk together cornstarch with a few tablespoons of the pumpkin mixture until smooth, then slowly whisk it into the rest of the pumpkin mixture.
  4. Add the Eggs: Crack the eggs into the bowl and whisk until smooth and well blended.
  5. Transfer to Baking Dish: Pour the pumpkin mixture into a baking dish.
  6. Set in Water Bath: Carefully place the baking dish into the roasting pan filled with hot water.
  7. Bake: Bake for 35 to 45 minutes, or until the edges are set and the center is slightly wobbly.
  8. Cool Down: Let the pudding cool at room temperature for about one hour and then refrigerate or serve warm.
