Pumpkin Curry Soup

A creamy and vibrant pumpkin curry soup that blends the earthiness of pumpkin with aromatic spices for a comforting bowl of warmth.

Ingredients

  • 1 can (15 ounces) pumpkin puree
  • 1 can (14 ounces) coconut milk
  • 2 to 3 tablespoons curry paste (red, green, or yellow)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 cups vegetable broth
  • Spinach or kale (optional)
  • 1 tablespoon olive oil

Instructions

  1. Prep your veggies: Chop the onion, garlic, and ginger.
  2. Sauté the aromatics in olive oil until translucent.
  3. Mix in the curry paste and cook for a couple of minutes.
  4. Add the pumpkin puree and stir until combined.
  5. Incorporate the coconut milk and vegetable broth; mix well.
  6. Simmer the mixture for 15-20 minutes, stirring occasionally.
  7. Blend the soup for a creamy texture.
  8. Add spinach or kale, if using, and let them wilt.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, garnished with cilantro and pumpkin seeds.

Notes

For extra creaminess, garnish with coconut cream and serve with crusty bread.
