Pumpkin Sausage Soup

Warm and comforting soup combining pumpkin and Italian sausage, perfect for fall.

  • 1 pound Italian sausage
  • 2 cups pumpkin puree (about one 15 oz can)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups broth (chicken or vegetable)
  • 2 tablespoons fresh sage (or 1 tablespoon dried sage)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prepare the sausage: In a large pot, heat a drizzle of olive oil over medium heat. Once shimmering, add the sausage, breaking it apart. Cook until browned, about 5 to 7 minutes.
  2. Sauté the veggies: Add the chopped onion and minced garlic. Sauté until the onions are translucent, about 3 to 4 minutes.
  3. Incorporate the pumpkin: Stir in pumpkin puree with the sausage and onions. Cook for a couple of minutes to caramelize slightly.
  4. Add in the broth: Pour in the broth, stir to combine. Bring to a simmer, and season with sage, salt, and pepper. Simmer for about 15 minutes.
  5. Blend for creaminess: Use an immersion blender to blend a portion of the soup until smooth, or carefully transfer half into a blender.
  6. Final touches: Taste and adjust seasoning as needed. Serve hot, garnished with crispy sage leaves.

Notes

For added flavor, consider using sweet or spicy sausage. A drizzle of olive oil on top enhances the presentation.
