Sweet Potato Shepherd’s Pie

This Sweet Potato Shepherd’s Pie features a delicious layer of sweet potatoes over seasoned ground turkey and mixed vegetables, creating a comforting dish that reminds us of cherished family memories.

  • 1 pound Ground Turkey
  • 2 cups Mixed Vegetables (peas, carrots, corn)
  • 4 medium Sweet Potatoes
  • 2 tablespoons Butter (or olive oil)
  • Salt & Pepper to taste
  • Cheese (optional)

Instructions

  1. Preheat the Oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes, then cook them in boiling salted water for 15-20 minutes until tender.
  3. Drain the sweet potatoes, return them to the pot, and mash with butter, salt, and pepper until creamy.
  4. In a large skillet, heat olive oil over medium heat, add ground turkey, and cook until browned, about 7-10 minutes.
  5. Add mixed vegetables to the turkey and cook for an additional 5 minutes, seasoning with salt and pepper.
  6. Spread the turkey and vegetable mixture in a greased baking dish, and spoon sweet potato mash on top, adding cheese if desired.
  7. Bake for 25-30 minutes until the top is bubbly and golden brown.
  8. Let cool for a few minutes before serving.

Notes

This dish can be made ahead of time and refrigerated. If using pre-packaged mashed sweet potatoes, adjust the butter and seasoning to taste.
