White Chocolate Raspberry Tiramisu

A delightful blend of tart raspberries and sweet cream, laced with white chocolate, this no-bake tiramisu is a perfect indulgence for special occasions or any sweet craving.

  • 4 cups raspberries (fresh or frozen)
  • ½ cup water
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1½ cups heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup raspberry syrup (from above)
  • 1 teaspoon vanilla extract
  • 1 package (7 oz) Savoiardi ladyfingers (about 24)
  • 1 ounce good-quality white chocolate

Instructions

  1. Start by combining the raspberries, water, sugar, and lemon juice in a small saucepan. Bring the mixture to a simmer over medium heat, stirring gently. Allow it to simmer for about 10 minutes until it thickens slightly.
  2. While your syrup cools, pour in the heavy cream and add a tablespoon of sugar, whipping it until soft peaks form.
  3. In another bowl, combine the mascarpone cheese, the remaining sugar, and vanilla extract. Mix gently until smooth and creamy. Then, fold the whipped cream into the mascarpone mixture.
  4. Take your ladyfingers and briefly dip each one into the cooled raspberry syrup. Place them in a single layer at the bottom of your serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the remaining raspberry syrup. Repeat with the remaining ladyfingers, mascarpone, and syrup.
  6. Cover the dish with plastic wrap and place it in the fridge for at least 240 minutes (preferably overnight).
  7. When you’re ready to serve, finely shave or grate your white chocolate on top.

Notes

Serve in individual glasses for chic presentation. The dessert tastes better when made a day in advance, allowing flavors to meld.
