Creamy Loaded Baked Potato Soup

Warm and comforting loaded baked potato soup filled with creamy potatoes, cheddar cheese, and crispy bacon.

  • 56 medium russet potatoes, peeled and diced
  • 68 strips of bacon, chopped
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup sour cream or Greek yogurt
  • 45 green onions, chopped
  • 6 cups chicken or vegetable broth

Instructions

  1. Prep the potatoes by peeling and dicing them into 1-inch cubes. Soak in cold water to prevent browning.
  2. Cook the bacon in a large pot over medium heat until crispy, about 7-8 minutes, then remove with a slotted spoon.
  3. Sauté a diced onion in the bacon drippings for 3-4 minutes until translucent.
  4. Cook the drained potatoes in the pot, then add the broth and bring to a boil. Reduce to a simmer for 15 minutes or until tender.
  5. Blend the soup until smooth using an immersion blender or a regular blender in batches.
  6. Add the cheese and sour cream to the blended soup, stirring until melted and creamy.
  7. Top with reserved bacon and green onions before serving.

Notes

For a vegetarian version, skip the bacon and use vegetable broth. Add spinach for extra nutrition.
