Cheesy Zucchini Rice

A delicious and comforting dish made with grated zucchini and melted cheese, perfect for any occasion.

  • 2 medium zucchinis, grated
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: Gather all your ingredients and cook your rice if it’s not already done.
  2. Grate the zucchini: Use a box grater or food processor; squeeze out excess moisture if needed.
  3. Sauté the garlic: Heat olive oil in a skillet and cook minced garlic until fragrant.
  4. Add the zucchini: Stir in grated zucchini with salt and pepper; cook for a few minutes until soft.
  5. Combine with rice: Mix in your cooked rice until well combined.
  6. Stir in cheese: Add shredded cheese and mix until melted.
  7. Finish: If using, add Parmesan cheese and adjust seasoning. Garnish with parsley.

Notes

For a creamier texture, add a splash of milk or warm broth when mixing in the cheese. Best enjoyed fresh but can be stored in an airtight container for up to 3 days.
