Creamy Broccoli Potato Soup

A rich and creamy soup that warms your heart, made with fresh broccoli, hearty potatoes, and a touch of cheddar cheese.

  • 4 cups fresh broccoli florets
  • 2 large Yukon Gold or Russet potatoes, peeled and diced
  • 1 cup aged sharp cheddar cheese, grated
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • Salt and pepper, to taste
  • 1 cup heavy cream

Instructions

  1. Prep your ingredients: Wash the broccoli, peel and dice the potatoes, and chop the onion and garlic.
  2. Cook the aromatics: In a large pot, heat olive oil or butter, add the diced onion and sauté until translucent. Add minced garlic and cook for another minute.
  3. Add the potatoes and broth: Stir in the diced potatoes, pour in the broth to cover the potatoes, bring to a boil, and simmer for about 15 minutes.
  4. Blend it up: Add broccoli florets, cook for 5 more minutes, then blend the soup until creamy and smooth.
  5. Cheese, cream, and seasoning: Return the soup to the pot, stir in the cheese and cream, and season with salt and pepper to taste.
  6. Taste and adjust: Sample the soup for seasoning, adjusting as necessary.

Notes

This soup can be made in advance and stored in the fridge for up to 3 days. Reheat gently before serving.
