Cozy Brown Butter Apple Cider Snickerdoodle Cookies

These soft and chewy cookies combine the nutty flavor of brown butter with sweet apple cider and a hint of cinnamon for a perfect autumn treat.

  • 1/4 cup (60ml) apple cider
  • 1 cup (200g) granulated sugar, divided
  • 1/2 cup (110g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 3/4 cups (345g) all-purpose flour, sifted
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cream of tartar
  • 2 teaspoons ground cinnamon, divided
  • 1/2 teaspoon salt

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the unsalted butter. Stir continuously until golden and fragrant, about 5–7 minutes.
  2. Reduce the apple cider: Pour apple cider into a small saucepan and bring to a simmer until thickened (about 10 minutes).
  3. Mix sugars: In a large bowl, combine 3/4 cup of granulated sugar, brown sugar, and browned butter. Beat until light and fluffy, about 3–5 minutes.
  4. Add eggs and vanilla: Beat in eggs one at a time, then the vanilla extract. Mix until well combined.
  5. Combine dry ingredients: In another bowl, whisk together flour, baking soda, cream of tartar, 1 teaspoon cinnamon, and salt. Gradually add to wet ingredients.
  6. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat the oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Form the cookies: In a small bowl, combine remaining 1/4 cup sugar and 1 teaspoon cinnamon. Scoop out a tablespoon of dough and roll it in the cinnamon-sugar mixture.
  9. Bake: Place coated dough balls on prepared sheets, leaving space between them. Bake for 10–12 minutes until edges are golden.
  10. Cool down: Let cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

These cookies can be stored in an airtight container for up to a week and freeze well for a few months. Pair them with warm apple cider or vanilla ice cream.
