Cowboy Steak and Eggs

A hearty breakfast featuring ribeye steak, eggs, crispy potatoes, chorizo, and bacon, all served with hot sauce for that extra kick.

  • 2 Ribeye Steaks
  • 1.5 tbsp Kosher Salt
  • 1.5 tbsp Black Pepper
  • 1 tbsp Garlic Powder
  • Canola Oil (as needed)
  • 45 Fresh Eggs
  • 3 Large Russet Potatoes (diced)
  • 1 White Onion (diced)
  • 45 Chorizo Sausages
  • 56 Bacon Strips
  • 1 tbsp Chipotle Garlic Seasoning
  • Chopped Cilantro (for garnish)
  • Hot Sauce (for garnish)
  • 1 can Medley of Beans (pinto and black preferably)
  • 2 tbsp Hot Sauce
  • 2 tsp Sugar
  • Salt to taste

Instructions

  1. Prepare the Potatoes: Dice russet potatoes and sauté in canola oil until golden and crispy, about 10-15 minutes.
  2. Cook the Bacon: In a separate skillet, cook bacon until crispy, about 5-7 minutes.
  3. Sauté the Onions and Chorizo: In the bacon fat, sauté onions until translucent, then add chorizo and cook until crispy.
  4. Cooking the Steak: Season ribeye steaks and cook in a hot skillet for 4-5 minutes on each side for medium-rare.
  5. Fried Eggs Perfection: In the same skillet, cook eggs sunny-side up or over-easy.
  6. Beans Medley: Heat beans in a saucepan with hot sauce and sugar for 5 minutes.
  7. Plate Everything Up: Layer crispy potatoes, chorizo, bacon, steak, fried egg, beans, and garnish with cilantro and hot sauce.

Notes
